Informational Video: Using a Commercial Hard Cheese Slicer

While cutting a Parmigiano Reggiano wheel with knives is more traditional, and more aesthetic, it usually leads to a lot of cheese waste. Our co-founder, Virgil, shows you how to use a slicer that will save product, time, and money.

How to Pick the Right Cheese Slicer

Whether you are a restaurant chef, deli owner, or a household that likes to buy and store Parmigiano Reggiano for later- a slicing machine is a great way to save money and lose less cheese in the process.

With a commercial machine, you can easily slice the size and weight that you, or your customers, want. The simplicity of its mechanical design allows to make thousands of cuts, easily and quickly.

Here are the benefits of using a commercial cheese slicer to cut hard cheeses like authentic Parmigiano Reggiano:

  1. The wire is adjustable, which allows you to cut everything from a 1lb cut of Parmigiano Reggiano to the entire, 86 pound wheel.
  2. The machine uses a rotating handle to give you the force you need to precisely cut hard cheeses with a rind like authentic parmesan down to the millimeter.
  3. The base of this machine is large enough to handle wheels of Parmigiano Reggiano. Some machines are meant for cheeses made in smaller wheels, and cannot accommodate a full wheel.
  4. The parts of this machine are removable by hand, without needing specialized tools, and are easy to clean and maintain. Because they are stainless steel, they do not corrode over time.

After you have processed the wheel, we always recommend vacuum-sealing all of your cuts. Vacuum sealing, rather than using a thin plastic wrap, ensures that the cheese will maintain its texture and taste for a great deal longer.
