We import everything directly from our close partners in Italy, without the use of middlemen. We know the owners of every business we work with. The products come in bulk, by boat, to our facilities in North Carolina- which allows us to reduce shipping costs and keep prices lower than other Parmigiano Reggiano dealers.

A few reason! Our business is owned by an Italian from Reggio Emilia, who has been close family friends with a Parmigiano Reggiano dealer for decades. This means we do not have to buy from corporations or dealers in Italy- we go straight to the source.
Secondly, we import all of our wheels by boat, in refrigerated shipping containers, to keep the transport costs low. This allows us to spread the cost of shipping from Italy across more customers- saving both you and us money.
Finally, we cut out all of the brokers in the United States. We do all of the regulatory and logistics work ourselves, without needing to pay consultants. Then we pass those savings onto you!

All of our Parmigiano Reggiano products must be stored in the refrigerator. Authentic parmesan does not contain artificial preservatives and is not shelf stable. For the cuts (not grated), we recommend keeping them in glass tupperware or wrapped tightly in a quality plastic wrap.
Our olive oils should stay in areas of the home that are room temperature and do not get too hot.
Lambrusco can stay in the pantry, but should be chilled before drinking.

Parmigiano Reggiano is the only true parmesan. If a cheese is certified as Parmigiano Reggiano, it means the Italian authorities can guarantee that it was made in the authorized production zone in Italy and does not contain preservatives or artificial ingredients. If a cheese is not labeled as Parmigiano Reggiano, it legally must be called parmesan to ensure customers understand that it is not original.
If you see "Parmesan" on the menu or on the product- it most likely means you are buying a copy of the real thing.

What is a Monovarietal Olive Oil?
Monovarietal olive oils only use one variety of olive. This leads to a higher quality oil and to more diversity in the taste of different oils. When only using one olive, the producer has more flexibility to really allow the native properties of that oil to shine.
Monovarietal olive oils tend to be more expensive than oils that have been cut with lower quality oils, because they typically come from specialized groves rather than industrial plantations.

If the product is refrigerated, we wrap the product in additional layer of thermal insulating wrap and add frozen dry ice packs, according to the size of the product.
