Healthy Cabbage Gratin with Authentic Parmesan

The truth? Cabbage is underrated. It is a great source of antioxidants and packed with vitamins and fiber, but it is still missing from so many Americans' menu rotation. Maybe it has a bad reputation for tasting bland, but that does not have to be the case.
This recipe is a perfect example of dressing up the cabbage and letting it shine, without using a ton of cream or butter. Here we use just a few simple ingredients, dressed with high-quality, monovarietal olive oil from Calabria, to make an unforgettable side dish that is also great for lunch the next day.
Ingredients

High quality Extra Virgin Olive Oil

Freshly grated Parmigiano Reggiano

1 medium cabbage

2 cloves of garlic

Fresh bread crumbs (or panko can be used if fresh is unavailable)

salt and pepper

Directions
Heat oven to 375 F.
Peel and cut the garlic cloves in half and sauté in olive oil in a large stovetop pan.
Cut the cabbage into thin slices and gently sauté until softened but not completely cooked. Sprinkle with salt, pepper and garlic powder to taste.
Remove cabbage from heat and let cool for about five minutes. Remove the garlic clove if desired. Once cooled, transfer to oven safe dish and spread evenly.
Use a block of authentic parmesan and freshly grate cheese across the entire dish of cabbage.
Spread bread crumbs across the dish, on top of the parmigiano reggiano.
Drizze olive oil across the top and cook in the oven for around 20 minutes, or until breadcrumbs are browned but not burnt.
