This commercial cheese slicer machine is manufactured in Italy. It is specifically designed to safely cut the hardest cheeses in the world. Perfect for delis, restaurants, or food distributors, it is strong, easy to use, and its manual cutting system makes it simple to cut through hard cheese without having to use an exhausting amount of force. When not cutting Parmigiano Reggiano with the wire, the platform makes a nice showcase board for cheese, with the handle easily folding out of the way.
How it works
First, pull the wire out from the center of the machine and allow the handle to rotate until you have the height you need. Then, situate the cheese and hover the wire over where you would like to make the cut. Tighten the wire by turning the handle clockwise until it rests on top of the cheese. Turning the handle counterclockwise can bend and damage the wire. If you maintain the wire well and never turn the handle the wrong way, you can cut at least 100 real parmesan wheels with one 0.8mm thick wire.
Safety note: always use the wire with caution. It can easily cut fingers and hands.

All of our Parmigiano Reggiano products must be stored in the refrigerator. Authentic parmesan does not contain artificial preservatives and is not shelf stable. For the cuts (not grated), we recommend keeping them in glass tupperware or wrapped tightly in a quality plastic wrap.
Our olive oils should stay in areas of the home that are room temperature and do not get too hot.
Lambrusco can stay in the pantry, but should be chilled before drinking.

If a cheese is certified as Parmigiano Reggiano, it means the Italian authorities can guarantee that it was made in the authorized production zone in Italy and does not contain preservatives or artificial ingredients. If a cheese is not labeled as Parmigiano Reggiano, it legally must be called parmesan to ensure customers understand that it is not original.
If you see "Parmesan" on the menu or on the product- it most likely means you are buying a copy of the real thing.
